Chicken Taco Filling

I love making this filing and having it on hand to use for tacos, burritos, nachos, taco salad and more.  It is a recipe that many are familiar with.  Most people do it in a slow cooker, and I did for years, but I found that there are times I don't remember to put everything in the slow cooker before I leave, so I adapted it for the pressure cooker.  is easy to put together. It only takes a four ingredients so it Best part is it can be done in minutes and doesn't heat up the kitchen when you use an electric pressure cooker.  This recipe works great for taco bars and pot lucks also.

Chicken Taco Filling

2 pounds boneless skinless chicken breasts
1 (16 oz) salsa, use your favorite
1 package taco seasoning mix
1/2 chicken broth

Combine salsa and seasoning mix in a bowl.  Pour broth into pressure cooker, add chicken.  Pour salsa mix over chicken, making sure a little gets between the layers of chicken pieces.  Bring up to high pressure and cook for 6 minutes, use quick release to relieve the pressure.

Remove chicken and shred with two forks.

Spoon some of the salsa mixture remaining in the pressure cooker over the shredded chicken.  Serve.
